Wipe down belly and place on paper towels in the fridge overnight so the skin dries out.

Salt, pepper and spices to taste (or rosemary and garlic). Pour some liquid (stock/wine) until the meat portion of the belly is submerged but make sure the skin is fully uncovered.

Cook on 240c fan forced until skin is crackled, then drop down to 170c for 2 hours, top up stock/wine if necessary.

Packaging: Your order will be delivered in normal paper bags. 
*You can add cooler bags for $10 each to keep your items fresh during delivery. 

On Arrival: Please be home during delivery times as you will need to refrigerate all goods immediately.
