ROSEMARY AND GARLIC OR & APPLE AND SAGE
Take porchetta out of packaging and wipe down, place in fridge overnight to ensure skin is fully dry.
Salt the skin all over and cook on 240c fan forced until skin has crackled. Drop down to 160 and cook for 35min per kg.
Let it rest for 10-15min before slicing!
